What refreshing way to start a summer party or even serve during a special occasion than a sorbet based drink! One such drink is very popular at Spanish weddings is called Sorbete de Cava y Limon which is lemon sorbet with wine. The recipe calls for two bottles of Cava Wine (Spanish wine), and one quart of lemon sorbet and a handful of strawberries to garnish. The Cava Wine will make the sorbet froth and makes for a delightful summer drink.

A different way to also make this type of sorbet drink is to substitute the Cava Wine with ginger ale for those not wanting an alcoholic beverage. The ginger ale will also cause the sorbet to froth and will make a light type of punch for any type of event.

Another recipe for a hot August day would be a Vodka lemon sorbet. This is very simple but requires a little time in the freezer so you may want to prepare it the day before. The ingredients are ½ cup of premium vodka, 3 cups of water, 1 ½ cups of sugar, 1 tbsp of grated lemon zest and 3 ½ tbsp of fresh squeezed lemon juice. Combine sugar and water in a saucepan, over medium heat and constantly stir until the sugar dissolves. Then add in the lemon zest until mixture starts to boil. Reduce the heat and let cook 5 more minutes.

Using a strainer, pour the syrup into a large bowl to remove any lemon zest. Add lemon juice and vodka; stir. In a container having a cover, pour in mixture and seal. Put container into your freezer for at least two hours. Take out of freezer and stir with a fork and return to the freezer for another two hours. Once solid take out of freezer and add to a blender and pulsate four or five times. Place in glasses and return to freezer until ready to serve.
